Easy and Quick Berry Brie Crostini Appetizer (3 ways)

For a quick, easy Spring or Summer appetizer make these berry brie crostini!

Using fresh, seasonal fruit and creamy brie cheese you get a delicious bite in under 10 minutes.

It’s a simple recipe that is perfect for entertaining!

I love to make these holiday brie crostini during the cooler months but I needed to make a version for the Spring and Summer season.

Two of these crostini have fresh fruit and herb pairings while the third with apricot jam is a wild card that you can switch up with fresh apricots. While apricots are of course not fresh berries, they pair so beautifully as a part of this crostini appetizer.  These little toasts are sure to impress guests!

ingredients needed

Brie cheese: creamy and buttery brie cheese is the key ingredient to make these crostini; you need one slice of brie cheese per crostini

Baguette: fresh baguette is the best choice for making this appetizer; you’ll need somewhat thick slices, about 1/2 inch thick

Seasonal fruit and jams: fresh berries like strawberries and blackberries pair well with fresh herbs as a topping; plus, we use apricot jam (or fresh apricot) to round out the seasonal flavours

Fresh herbs: a fresh herb like fresh basil and fresh mint pair beautifully with strawberries and blackberries respectively

Honey: a fresh drizzle of honey brings all the flavours together and it’s the perfect finishing touch!

how to make these berry brie crostini

Step 1: Preheat the oven to a low broil.

Step 2: Slice baguette into 1/2 inch slices. Add the baguette slices to a large baking sheet and top each slice of baguette with a piece of brie cheese.

Step 3: Cook the crostini on low broil until the brie is melted and edges of baguette are just golden. This will take about 3-5 minutes depending on your oven. **Put the baking sheet on a lower rack in the oven to avoid any burning**

Step 4: Remove the crostini from the oven and top each crostini with toppings: slices of strawberry & garnish with fresh basil leaves; fresh blackberries & fresh mint; and/or, apricot jam or fresh apricot slices and chopped pecans. Place the crostini on a serving tray, drizzle with honey and serve.

expert tips

  • There are three seasonal flavour combinations that go deliciously well with the melted brie. Make a few crostini of each kind so guests can enjoy a variety of tastes. Or, just pick one flavour combination to make for all the crostini!
  • These toasted homemade crostini will have crispy crusts and the bread will be soft on the inside. If you prefer bread slices that are super crispy, toast the baguette slices lightly to start for a few minutes first and then top with the brie and toast again.
  • If you don’t have fresh strawberries on hand, substitute with a dollop of strawberry jam instead.
  • If you don’t have fresh blackberries on hand, try using a dollop of blackberry or blueberry jam instead.

common questions

What if I don’t have brie cheese?
While this recipe is meant to be made with brie cheese, you could also use slices of gruyere cheese instead. Gruyere cheese goes just as well with the berry and fruit flavours.

Can I make this recipe gluten-free?
You bet! Use a gluten-free baguette to make this berry brie crostini appetizer. Make sure the seasonal jams and nuts are gluten-free as well.

Will french bread work for this recipe?
Unfortunately french bread is generally on the larger size so I recomment only using baguette bread for this appetizer.

storage

I do not recommend storing these crostini in the fridge for later. Enjoy all of the crostini the day you make them!

Ingredients

  • 250-300 g brie cheese (1/2 inch thick slices, about 2 inches length)
  • 16 slices baguette (sliced into 1/2 inch pieces)
  • 4-5 strawberries, sliced
  • 9-12 blackberries
  • 3-4 tbsp apricot jam or fresh apricots
  • fresh basil, fresh mint and pecans and fresh thyme for garnish
